From the appearance in the concept art, I'd say the hood appears to be attached... but honestly... attaching the hood so it fits nicely and allows your robes' lapels to sit down well without folding up when you are wearing it and moving around is a pain...

So I had mine made fully detachable... They are stuck on with hidden buttons.... no velcro cos it tends to damage fabric that gets caught in the burrs.... the design is similar to Giovanni's in Lineage.... I'm pretty sure his hood is fully detachable.... (based on how it sits on the vest in the short movie) if you look in my gallery, there is a shot of the hood from the back.

Hope this helps you in making ur costume.

It's sewn to the jerkin under the lapels. Remember this; it has it's shape because the jerkin is boosted a few inches by three layers of leather.

See here: http://images4.wikia.nocookie.net/__cb20110216140924/assassinscreed/images/8/8e/Ezio_Cesare_ACBH.jpg

In the trailer for the game, the padding doesn't go up so high, but the hood is a lot longer so it looks a little different. Not a big deal at all.

Think of it this way - Ezio is basically wearing a sleeveless, low-cut, v-neck hoodie. The lapels and the collar with the ruffles are part of another shirt worn underneath the jerkin. The sleeves of that shirt are the striped sleeves you see on the costume.

A warning if you want it as accurate as possible - I would strongly advise against using the AC Lineage movie hood design. I'm not sure why but it looks like they just threw a rag over Giovanni's head. They didn't sew it down or anything.
