I also prefer my bananas a little on the firmer side, but almost never manage to eat them before they get icky. This is a good excuse for me to mash them up and use them in baking or other recipes.
Another good trick is to peel them, chop them up, and freeze the chunks. That way you can just pop 'em in the blender for smoothies and you don't need to use ice.
