The open back is what takes this from 'beginner' to 'intermediate' sewing.

While I agree that zippers are a serious p.i.t.a., in this particular case I'd go with non-stretch fabric & a side zip dress pattern. Why? because of that open back. If you have a non-stretch fabric nicely fitted, you can use the really light plastic boning along the edges of the opening to make it look really sharp. No matter how well it's assembled, a stretch fabric with that open back is going to gape in the back & cause unwanted ruching in the front across your belly. If you put boning in a stretch fabric, it can flip, bow & otherwise just not work.
