Crisp lines are very difficult with dye, especially to the inexperienced. I advise against that option, especially on a treated windbreaker.

The easiest (but not cheapest) option is to get three jackets and perform cut & swap surgery to get your big color blocks.
The best looking option is to make the jacket from scratch creating the color blocks as you go.
The most beginner/ non-sewist friendly option is to buy a WHITE jacket and use fabric paint to fill in the color blocked areas. (For most painting on fabric, starting with the lightest color base fabric gives the best results)
