Sage is a classic. It's also brewing-friendly; there's some easily-googlable old recipes for sage ale and it's a moderately common component of gruit mix. I'd also recommend nutmeg or rosemary, but both of those are a little heavy duty so taste test them in a non-brewing capacity first. The nice thing about mead is that given how long it usually ages for, the herbs will have a lot of time to mellow down.

Hmm, I didn't think of that (I've mostly been concentrating on sweet herbs like cinnamon, ginger, etc).

I am going to attempt Pad Thai tonight. We got some noodles and what not from the Asian market yesterday but I couldn't find tamarind paste; mostly because I couldn't remember the name and partly because I couldn't read the labels and the little bit of English that was on the shelf markers wasn't really useful.

As a back up I found out that mixing vinegar and fruit juices can substitute the tangy sweetness of the paste, but we're going to try another market today to see if we can find any.

All this mention of Thai food... Man I want pad Thai. Luckily I get some on Wednesday while I'm in Toronto for the day (there's at least a dozen Thai joints where I am for one more week, BUT none of them have tamarind pad thai., which is the only kind I like. The only two places I know that have it are an awesome Thai restaurant in downtown TO, and near my boyfriend's house (and when in TO, it's about 150 kilometers away... compared to 450 when living here.)

Just bought a big carton of chow mein for I guess what's now dinner (plus an eggroll). A lot more than I thought I would get. I am both loving this and wondering how the heck I'm going to take this home if I can't finish it all.

Well, now I'm the envy of most of my housemates. My first dinner cooked here (I moved in and ate out yesterday, and breakfast and lunch were cold stuff) was a roast chicken with mini potatoes and steamed peas. The house smells fantastic and everyone is all "Oh wow, you're one of the first housemates we've had in ages who can really cook".... and I'm all, whaaa? Roasting a chicken is EASY. Clean off, season, put in a roasting pan, roast it for a couple hours. Heck, I did the potatoes in the same pot, all I had to do was scrub them.

I'm pretty picky about guacamole. Fairway's tastes very fresh even though there are some preservatives present, and has pretty good flavor balance overall, but there is no heat whatsoever, despite the alleged jalapenos on the ingredients list. That's great for people who don't like spice, but not for me. The quest for perfect guacamole continues.

I haven't found any that I like as well as my own. The biggest problem is getting the avocados at the right moment. The ones in the stores are usually too green so I have to get them a couple of days in advance and let them mingle with the bananas. Then you have to use them right away. If I just have a sudden craving for guacamole, I'm out of luck.

If you have under ripe avocados and you're impatient and want your guacamole right away, you could just microwave the avocado on half power for 30 seconds. It'll soften the flesh and you won't have to wait a few days to use it.
