Anime North, Fan Expo, DTac and MTac.
If you want to include areas like Oshawa, there's the Northern Anime Festival.

Check out the Canada Conventions Forums for other gatherings and photoshoots, as well as AnimeCons.com. ^_^

Well, if you are willing to travel a bit, there are a couple cons in the Ottawa area. G-Anime in Gatineau in February, and AC3 in November.

Well, AC Cubed changes location every year, but it is generally in central Ottawa, and is announced quite early on into the year. G Anime is being held at the Palais des Congrès(200 Promenade du Portage), in Gatineau, 10 minutes from downtown Ottawa.

Weeeeellll...

There's FanExpo that takes place at the end of August. 3 days
There's Anime North which is the last weekend of May. 3 days
There is DTAC (December Toronto Anime Convention)which takes place mid December. 1 day
There is MTAC (March Toronto Anime Convention) which takes place mid March. 2 days
There is Polaris which takes place in mid July. 3 days
There is AdAstra which takes place the last weekend of March. 3 days
There is TCAF (Toronto Comic Arts Festival) which takes place mid August. 2 days
There is Dot Con which take place mid November. 2 days

All the Hobbystar conventions (FanExpo, MTAC, DTAC, also various small ComicCons) take place in the Metro Toronto Convention Center (MTCC) which is on Front st. http://www.hobbystar.com/

Anime North takes place in Mississauga, at the Double Tree Hotel and the Toronto Convention Center (TCC). The DT is at 600 Dixon Rd, and you can get to it easy via bus by TTC. http://www.animenorth.com/

Polaris is held at the Sheraton Parkway North Toronto Hotel. http://www.tcon.ca/polaris/modules/content/?id=101

AdAstra takes place at the Crowne Plaza Toronto Don Valley Hotel, 1250 Eglinton Avenue East. http://www.ad-astra.org/

TCAF isn't known for it's cosplayers, but always a good time to trail blaze a trend. It takes place all over the Annex in downtown Toronto. Check out the map http://www.torontocomics.com/tcaf/

Dot Con will be at the Holiday Inn at 370 King St. West.
(the main website appears to be down at present)

Usually me and my cosplay buddy attend Anime North, FanExpo, and both the TACs because there tend to be a lot of cosplayers, and it's sort of evenly spaced. AdAstra is an ever growing con though. It's a good place to try more out there costumes and meet people who work the Toronto convention circuit the rest of the year.

And yeah.. throughout the year there are many cosplay events, parties, picnics, larps and just flash mobs right down here in Toronto. Check the listing in this part of the forum and if you wanted you could probably be doing something cosplay related every week of the year ^^

If you want my opinion, you know now all the cons in the area.
My opinion: Start CNAnime (the ones in December and March) move on to Anime North, and avoid Dot-Con this year (First year, see how it checks out first)

Regarding Polaris, I want to add that it has a costuming mini-con every year now. Friday night they have a special theme night/party/dance. This year was a vampire ball which was pretty sweet.
