What fabrics should I use for Starfleet uniforms?

I've bought some official Star Trek patterns for TNG and TOS uniforms. I plan on making the outfits for me and my friend but I don't know what the best fabric would be. I know knits are recommended but there are so many different kinds of knits that I don't know which to use. What about the gold trim? Would any kind of gold trim work well or do you guys recommend anything specific? Any ideas? We've already got our comm badges.
