Are you looking for exclusively a series or films as well? There's not a whole lot of series I consider particularly WHOA AMAZING so I'll offer both.

Movies:
Perfect Blue. (Has sexual assault references so it might not be appropriate for everyone)

I'll limit to just 5:

Texnolyze (think a more thoughtful deathnote)
Now and then, Here and there (full of emotional punch due to paralells to man's inhumanity)
Paranoia Agent (hard to think of a better 13 part series)
Utena Series (a must see for fans of symbolism)
Berserk Manga (the most violence you can pack on a manga page and still going strong 25 years later)
