Question How to make padded armor?

Hi guys, I was wondering if anyone had any ideas as to how I could go about making a padded armor (think catcher's chest protection). If I wanted to make something like a catcher's chest pad it would be fairly easy (sandwich foam between 2 layers of fabric and sew ribbing) but the look I'm going for is large raised rectangular shapes.

Here's a picture that looks like what I'm aiming for:

I have some half inch thick foam that I've scavenged that I could cut into rectangles, but I'm not quite sure how I could cover them with fabric and affix them without the rectangles being squished and losing that angular raised look. I was thinking foam because of mobility and weight issue (going to be wearing this all day at a comiccon and I'd like to be semi-comfortable.

Any ideas?
